HAYDAR ASAN
Haydar Asan, known as "Kanatçı Haydar," was born in Tunceli in 1954. He moved to Istanbul in the 1970s, where he worked in various restaurants and eateries, gaining experience in every aspect (level, division) of the restaurant industry, from dishwashing to head waiter. He truly began from the ground up..
By the late 1970s, Haydar Asan worked at some of the city's renowned establishments, including "Keban Et Lokantası," "Buhara Ocakbaşı," "Malatyalı Rıfat Usta," and "Çınarcık Et Lokantası."
During this time, he was particularly influenced by the master chefs from Southeastern Anatolia and their regional cuisine. This influence became evident in the menus of the restaurants he later owned.
In the early 1990s, Haydar Asan resided in the Kocasinan district of Istanbul, where he laid the foundations of his career in the chicken wings business.
In 2000, he opened his own restaurant, "Kanatçı Haydar," located at Mezbaha Yolu, Ahlat Sokak and the restaurant continues to serve in the same place since then.
